DRY WHITE WINES




CARME' (Chardonnay) Dry $12.00

This is our premium white, made from 95 % Chardonnay and 5% Valvin Muscat grapes.
It similar in style to the light white wines of Burgundy and the Muscadet of the Loire, rather than those wines from California or Australia. Light, crisp and fruity, with a pronounced ripe cantaloupe aroma.
It pairs well with light chicken but is at its best with all but the heaviest seafood.


SEYVAL Dry   $ 6.00

Made from a French-American hybrid grape (Seyval blanc) This is a light, crisp dry white wine resembling a dry, early harvest Riesling.  
It goes well with heavy fish like tuna or salmon, or with spicy chicken dishes.
ROSE WINE




VIN Di PASQUALINA $ 8.00

Named after my Great Aunt Pasqualina (Passover or Easter).  This is a dry rose’ that at first seems sweet, especially the aroma.  It is a blend of three grapes, but the aroma and character come from an American white grape called Niagara, also known as the white concord.  
It does well as an aperitif or with ham or turkey and cranberries.
DRY RED WINES




CHAMBOURCIN Dry  $10.00  

This variety of grape is another French/American hybrid whose parents can be traced back to Burgundy.  Breed to be a cold and disease tolerant version of Pinot noir this is one of the premier hybrids grown on the east cost.  It is used for everything from light Beaujolais style wines to very heavy burgundy style reds.  Ours varies with vintage but is usually a little fruitier and fuller bodied than a Pinot noir.  
It pairs well with red meats and game as well as heavy pasta.


MARECHAL FOCH $10.00

An extremely old hybrid from the Loire region of France. Always a full bodied red wine, with ripe berry flavor of currant and blackberry and black cherry. A table wine fit for most any occasion.


NOUVEAU Red Dry $10.00
 
This wine is made in the traditional style of Nouveau Beaujolais in which the grapes are not crushed prior to fermentation.  The whole grapes undergo a process call carbonic maceration, a very slow cool form of fermentation.  A little color is lost because of the lack of contact between intact skins and wine but the tannins derived from the skin are kept to a minimum.  
The result is a very fresh fruit red wine that pairs well with most holiday fare save fish.  The wines will age well but will rarely improve much if at all.  These are best consumed before the traditional November release of the following vintage.
FRONTENAC $12.00

A recent hybrid out of Minnesota, known for it’s cold tolerance and disease resistance.
It is doing very well in our vineyard.  
The wines are heavy, bordering on port.
Try it with the heaviest meal or the most robust cheese,
PINOT NOIR  $12.00  

The classic red grape of Burgundy.  It pushes the envelope for cold tolerance here at our vineyard, but ripens well in most years. It likes our cool nights and slow growing season.  
The wine is well received when made in a Rose’ style, in the toughest year, or a traditional French Style, in the best years.  Beef rules with this wine.
SWEET WINES



DULCINEA Sweet  $8.00

Based on the Seyval grape this wine is finished at about 2% residual sugar which is at the dry end of sweet.  It is very well balanced, not overly sweet, with a nice refreshingly  acidic finish.  
We enjoy this wine after dinner with a simple dessert or with very hot Spicy foods.



LA BRUSCA Sweet $8.00

Made with concord grapes. Moderately sweet with nice balance..  Makes a wonderful sangria or chilled as an aperitif



APPLE RASPBERRY  Sweet $8.00

An infusion of apple wine with red raspberries.
Goes well with vanilla ice cream, cheese cake or pungent cheeses (gorgonzola or blue cheeses).


SPICED APPLE WINE  Sweet $8.00

A seasonal wine made from tart apples, infused with cinnamon, clove and orange zest.  
A wonderful punch when warmed in a crock pot or chilled with apple or pumpkin pie.
