Our Wines This is our complete list, we are usually always out of something. So it is best to call for availability or my best guess for a release date WHITE WINES: CARME' (Chardonnay) Dry $12.00 This is our premium fine white, made from 100% Chardonnay grapes. Light and flinty with a smoky background. The wine is named after my mom Carmella, which is Italian for "thick as a brick". It similar in style to the white wine of Burgundy rather than those chardonnay wines from California or Australia. It pairs well with light chicken and fish. SEYVAL Dry $6.00 Made from a French-American hybrid grape (Seyval blanc) This is a light, crisp dry white wine resembling a dry, early harvest Riesling. It goes well with heavy fish like tuna or salmon, or with spicy chicken dishes DULCINEA Sweet $8.00 Based on the Seyval grape this wine is finished at about 2% residual sugar which is at the dry end of sweet. It is very well balanced, not overly sweet, with a nice refreshingly acidic finish. We enjoy this wine after dinner with a simple dessert or with very hot Spicy foods ROSE WINE: VIN Di PASQUALINA $8.00 Named after my Great Aunt Pasqualina (Passover or Easter). This is a dry rose’ that at first seems sweet, especially the aroma. It is a blend of three grapes, but the aroma and character come from an American white grape called Niagra, also known as the white concord. It does well as an aperitif or with ham or turkey and cranberies. RED WINE: DOLCETTO/SANGIOVESE Dry $12.00 This is a full bodied red made from two northern Italian Grapes. Sangiovese is the Chianti grape and it is this grape that gives the wine it's character. Dolcetto is often used by the Italians in the same way the French use Merlot in Bordeaux. This is a light, fruity grape used to soften heavier acidic/tannic wines. The wine goes well with roasts and heavy pastas. PINOT NOIR Dry $12.00 Pinot noir is the red grape of Burgandy. Ours is traditionally medium bodied, soft and with a lot of cherry fruit. We will always give up a little color to keep the wine balanced. It goes well with roast beef and lighter pasta dishes CABERNET FRANC Dry $10.00 Cabernet franc is considered one of the minor Bordeaux varieties like merlot, taking a back seat to Cabernet sauvignon. In France it used to tame the very acidic/ tannic Cabernet sauvignon but on the East Coast of the US it makes a well balanced Merlot style of wine. Often with more body than Merlot it also goes well with beef and pork dishes. MERLOT Dry $10.00 2000 represents our first vintage for this Bordeaux variety, made immensely popular in California. The vines are young so we keep the wine medium bodied untill the vines start to mature in three or four more years. It is a typical wine for the variety of grape, but lighter and lower in alcohol than those from the wet coast. Like Cabernet franc, the wine does well with red meats and pasta with tomato sauce. CHAMBOURCIN Dry $10.00 This variety of grape is another French/American hybrid whose parents can be traced back to Burgundy. Breed to be a cold and disease tolerant version of Pinot noir this is one of the premier hybrids grown on the east cost. It is used for everything from light Beaujolais style wines to very heavy burgundy style reds. Ours varies with vintage but is usually a little fruitier and fuller bodied than a Pinot noir. It pairs well with red meats and game as well as heavy pasta. NOUVEAU Dry $8.00 This wine is made in the traditional style of Nouveau Beaujolais in which the grapes are not crushed prior to fermentation. The whole grapes undergo a process call carbonic maceration, a very slow cool form of fermentation. A little color is lost because of the lack of contact between intact skins and wine but the tannins derived from the skin are kept to a minimum. The result is a very fresh fruit red wine that pairs well with most holiday fare save fish. The wines will age well but will rarely improve much if at all. These are best consumed before the traditional November release of the following vintage. LA BRUSCA Sweet $8.00 Made with concord grapes. Moderately sweet with a little tartness. Makes a wonderful sangria or chilled as an aperitif APPLE RASPBERRY Sweet $8.00 An infusion of apple wine with red raspberries. Goes well with vanilla ice cream, cheese cake or pungent cheeses (gorgonzola or blue cheese. |
